4yellow tofu fruit
100g bean sprouts, blanched
100g cabbage, chop coarsely, blanch

Lcucumber, cut into 2 parts, sliced
80g fried peanuts, finely crushed
1celery stalks, finely sliced
Oil, for frying
Broth
400ml of water
5red cayenne pepper
3garlic cloves
2bay leaves
2orange leaves
3tbsp brown sugar
2cm galangal, bruised
1tsp tamarind
½tsp salt
4tbsp
Bango Sweet Soy Sauce
Complementary
Vegetable bakwan
Fried onions
Shrimp crisp

How to make

Heat oil, fry tofu until crispy. Cut into 4 or 6 pieces. Set aside.

Soup: Cook all ingredients including Bango Sweet Soy Sauce until it boils and is absorbed. Lift. Filter. Mix well with crushed peanuts. Set aside.

Cut the ketupat into pieces, then divide into serving plates. Drizzle with the sauce mixture.

Add pieces of tofu, bakwan, bean sprouts, cabbage and cucumber. Sprinkle with celery, fried onions and crackers. Serve.
