Here’s a recipe for Siomay, a popular Indonesian dumpling dish:

Ingredients:

For the filling:

  • 250g ground chicken or fish (or a mix of both)
  • 100g shrimp, finely chopped (optional)
  • 2 tablespoons tapioca starch (or cornstarch)
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1/2 teaspoon white pepper
  • 1 tablespoon sesame oil
  • Salt to taste
  • 1/2 carrot, finely grated (optional)
  • 2 spring onions, finely chopped (optional)

For the dipping sauce:

  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1-2 teaspoons chili sauce (optional for spice)
  • 2 tablespoons water

For the siomay wrappers:

  • Siomay wrappers (available in most Asian markets, or you can use wonton wrappers or make your own)

For steaming:

  • Cabbage leaves (for lining the steamer)

Instructions:

  1. Prepare the filling:

    • In a bowl, combine the ground chicken (or fish), shrimp, tapioca starch, garlic, soy sauce, white pepper, sesame oil, and salt. Mix everything well until it forms a smooth paste.
    • Optionally, add grated carrot or chopped spring onions for extra flavor and texture.
  2. Assemble the siomay:

    • Take a wrapper and place a spoonful of the filling in the center.
    • Gather the sides of the wrapper and form a pouch, pinching the edges together to seal. You can fold or crimp the top to make a neat shape.
  3. Prepare the steamer:

    • Line a steamer basket with cabbage leaves to prevent the siomay from sticking.
    • Place the siomay in the steamer, leaving space between each one for expansion.
  4. Steam:

    • Steam the siomay for about 20-25 minutes, or until fully cooked.
  5. Make the dipping sauce:

    • In a bowl, mix together the peanut butter, soy sauce, vinegar, sweet soy sauce, chili sauce (if using), and water. Stir until smooth and well combined.
  6. Serve:

    • Once the siomay is done steaming, serve it hot with the dipping sauce on the side. You can also garnish with fried shallots or a sprinkle of spring onions if desired.
