Ingredients:
For the filling:
- 250g ground chicken or fish (or a mix of both)
- 100g shrimp, finely chopped (optional)

- Siomay wrappers (available in most Asian markets, or you can use wonton wrappers or make your own)
For steaming:
- Cabbage leaves (for lining the steamer)

- In a bowl, combine the ground chicken (or fish), shrimp, tapioca starch, garlic, soy sauce, white pepper, sesame oil, and salt. Mix everything well until it forms a smooth paste.
- Optionally, add grated carrot or chopped spring onions for extra flavor and texture.

Assemble the siomay:
- Take a wrapper and place a spoonful of the filling in the center.
- Gather the sides of the wrapper and form a pouch, pinching the edges together to seal. You can fold or crimp the top to make a neat shape.

Prepare the steamer:
- Line a steamer basket with cabbage leaves to prevent the siomay from sticking.
- Place the siomay in the steamer, leaving space between each one for expansion.

- Steam the siomay for about 20-25 minutes, or until fully cooked.

- In a bowl, mix together the peanut butter, soy sauce, vinegar, sweet soy sauce, chili sauce (if using), and water. Stir until smooth and well combined.
